Spanish Omelette

Spanish tortilla or omelette is a traditional dish from Spain and one of the signature dishes in Spanish cuisine. It is an omelette made with eggs and potatoes, optionally including onion.

Recipe:

Ingredients:

  • 1 large potato

  • 1 large onion

  • 1 tsp extra-virgin olive oil

  • 3 eggs

  • salt and pepper as per taste

Instructions:

  1. Scrape the potato or leave the skins on, if you prefer. Cut them into thick slices. 

  2. Chop 1 onion.

  3. Heat 150ml extra-virgin olive oil in a frying pan, add the potatoes and onion, and some salt, stir occasionally until the potatoes are softened.

  4. Beat 3 eggs separately, then add the potatoes, onion, and salt and pepper. (You can also add spices of your choice)

  5. Pour everything into the pan and cook from both sides on a moderate heat.
